Stainless Steel Outdoor Cabinets

Stainless is the default for outdoor cabinets, but the grade matters. Grade 304 has 8% to 10.5% nickel and more chromium than 430, which has no nickel at all, and the nickel is what gives 304 its corrosion resistance. One hood maker calls 304 "a must" for outdoor kitchens. Grade 430 costs less and is fine inside the house. Ask for the grade in writing and check the hinges, slides and screws too: a 304 door on plain steel hinges will still rust at the hinge. In full afternoon sun, any metal door gets hot to the touch, so a covered patio or a shade sail makes stainless much more pleasant to use.

Marine-Grade Polymer Cabinets

Marine-grade polymer cabinets are cut from high-density polyethylene (HDPE) sheet, a sheet developed for boat building. One leading maker says its sheet is stabilized for harsh sun and won't rot, swell, splinter or delaminate when wet. Polymer comes in solid colors all the way through, so a scratch doesn't show a different layer underneath, and doors can be routed into a shaker profile. Plastic sheet expands and contracts with temperature, so the maker should leave expansion room at joints and use the fasteners the sheet maker specifies. Ask for a sample in the color you want and leave it in your yard for a few weeks.

Powder-Coated Aluminum Cabinets

Aluminum cabinets don't rust, weigh less than steel, and take a powder coat in solid colors or wood-grain patterns. The coating is what you're really buying. The architectural aluminum industry rates coatings to AAMA 2603, 2604 and 2605, in rising order, based on years of outdoor exposure in South Florida plus lab tests for color and gloss retention and chalking. AAMA 2605 is the ten-year top tier. A cabinet coated to a higher spec will fade and chalk more slowly in the sun. Ask the maker which spec the powder meets. If nobody can tell you, assume it's the basic grade, and expect a wood-grain finish on the south or west face to fade first.

The grill island is the structure the cabinets go into. It's framed in galvanized steel studs or concrete block, sheathed in cement board and finished in stucco, stone or tile, with openings sized for the grill, a griddle or flat-top, a side burner, an access door to the gas valve, and drawers. Get the grill and griddle models first, because each one's install manual sets the cutout size and whether the island needs an insulated jacket. St. George Heat and Outdoor Cabinets

St. George's climate is why indoor cabinets fail on a patio. The NOAA 1991-2020 normals for the St. George station put the average July high at 101.9°F, with June at 96.4°F and August at 99.9°F. Winter nights drop below freezing: the normal January low is 28.4°F. Rain is scarce, about 9.31 in. a year, and the air is dry. Hourly humidity at St. George Regional Airport averaged 35% over 2021-2025 and just 17% in June.

That combination is hard on wood. According to the USDA Wood Handbook, wood shrinks and swells with moisture and can warp, check and split. Outside, a cabinet goes from dry summer air to an occasional soaking storm to a frost, every year. Paint and varnish slow that exchange but don't stop it. Strong sun adds fading and chalking on top. Metal and polymer don't take on moisture, so the trouble spots move to the finish, the hardware and how hot the doors get.

Orientation matters as much as material. A grill island on a west-facing patio takes the hottest sun of the day on its doors, while one tucked against the house on the east side is in shade by early afternoon. If you're placing a new island, put the cabinet faces where a roof, pergola or the house itself shades them, and keep the grill's exhaust side away from doors you open often.

If you want the look of wood, use it as a facing that can be replaced, or choose polymer or powder coat in a wood-grain pattern. Keep exposed wood under a roof.
